offered flavors that seemed ultra-modern, exotic, fun, or as fresh as the day’s catch. Visitors encountered a taste of California's bounty, San Francisco's specialities, and a sampling of cuisines
from around the world.

Immigrants have played an enormous role in San Francisco’s history, and their different cuisines are a large part of the city’s charm. During the Gold Rush a flood of people arrived from around the world, each bringing memories of their favorite foods. Since then, succeeding waves of immigrants have integrated their cuisines into the city’s colorful culture, as residents grew to crave new tastes from afar.
